Lactase hydrolyses the lactose in monosaccharides: glucose and galactose. Dairy products containing lactose cause lactose intolerance for some people. Lactose intolerance is observed all around the world in different frequencies. Approximately 70% of the world population suffers to some degree from lactose intolerance. To avoid lactose intolerance, lactase can be used. Lactose can be eliminated by treating milk and other milk-based products with Lactase, which degrades lactose into glucose, galactose and some galactooligosaccharides.
